Removing bird droppings, and damage from them (maybe they only removed stain damage)
(Wet) Sanding
I have not seen someone dry sand these isolated paint defects live, and on a real car (by edges and concave/convex areas).
But I haven't seen most of detailing videos...
I wouldn't spend too much time or money thinking about hand polishing pads. You can hand polish with basically anything -- just might require a bit more elbow grease -- and I don't think there's much efficiency you can gain with pads unless you are doing a lot of hand polishing.

About hand polishing: A lot of times I have come across people hand polishing with wax applicators, which I'm not a fan of.
Then again, a lot of machine pads don't feel great to use by hand (too thick, etc).

My experience with open cell (/honeycomb) bug sponges is that when I use them the bugs get off the paint and into the sponge. After removing the bugs from the paint, I'm not able to rinse them out of the sponge. Eventually, the sponge ends up with lots of bugs in it.
